Entry for April 24, 2007 BURNT BEANS.. !!!
My oldest remaining sister is quite a comedian, I have always said she should try stand up comedy. She had been an over the road truck driver until several years ago her bout with cancer took her off the road. She has survived her ordeal with this terrible disease. Both chemo and radiation treatments didn't dampen this girls spirit. During her driving days she drove in a company that had about 30 drivers and she was the only woman driver. A driver had won Trucker of the year several years in a row. Pam was named Trucker of the Year for two years in a row. Quite a feat for my sis!!
Pam is a true lover of animals. She has many cats, dogs, a couple of horses and a pet bull named Harley. All her animals have names. She is always taking in strays.
My favorite story Pam tells is about her cooking pinto beans when she first married. Pam is an outdoor person and liked to work with our DAD. The newly weds moved into a mobile home and set up house keeping. Her new husband ask her if she could cook some pinto beans, he replied," I wish I had a pot of pinto beans like mom cooked." Pam said yes I will cook you some beans today while you are at work. It's off to the store and she buys some dried pinto beans and returns home and puts the beans on the stove in a brand new pot. Pam becomes involved in some yard activity and forgets about the beans. Whens she see smoke coming out of the trailer it doesn't take long for her to know whats happening, she makes a mad dash inside and some how removes the burning beans and black pot. Not wanting to tell her new husband about the beans and blacken pot she comes up with a bright idea. She will bury the beans and pot somewhere in the yard. She goes to Krogers and buys 4 cans of Luck's pinto beans. That night as they were eating George is impressed with the beans. "Pam these pinto beans are just like mom cooks." Pam didn't tell him for several years his pintos were out of a can!

Entry for April 09, 2007 EASTER DINNER........
My wife takes great pride in preparing special dinners for the family get togethers. Easter is one of those special days. She spent two days cooking a feast for our two children, their children, their husbands or boy friends. Things didn't at all work out like she had planned. The older the grand girls get the harder it is to get them to attend. I know they are adults now and have their own lives to led.
First, our daughter Carla was on a trip to California with her truck driver boy friend to move a military family's belongings. They were going to make it back Sun. but due to an ice storm near Albquerque, N.M. they were stranded for a day. Our oldest grand daughter called and said she was unable to attend this year. Our grandson didn't get to come. Our next to the oldest grand daughter called about an hour before time for dinner and said she had some bad news, her car wouldn't start. Thats not a problem I tell her, I will come to get you and great grandson Greyson. They live about 30 miles from here.
We finally get to set down for Easter dinner and give thanks for what we have. Dinner consisted of ham, creamed potatoes, green beans, pinto beans, macaroni, homemade dressing, cornbread, ice tea, German chocolate cake and cherry cream pie. Yum, yum!
This year my youngest grand daughter gets to sit at the big people table for the first time. Even though the family was not all here a good time was had by all. After all were back to their homes I could see the hurt in my wife's eyes. As time goes by it harder to get all your family to attend these family events.

Entry for March 17, 2007 MY TOWN.........
My town where I live is small but the slow pace of life suits me just fine. No traffic problems here, we just got our second redlight, isn't that progress? The city fathers haven't yet decided if they should turn both lights on at the same time.
Estill Springs was founded in 1840 and was named for the Estill family that owned most of the land. The springs came from a mineral spring that once graced our town. People from all over the states came to use the spring for theraphy. Things were booming in those days, we even had a couple of hotels for our tourist. Years later the highway department would build a new highway, 41 A, across the land and destroyed the spring. Things came to a halt with the tourist and once again the town became just a sleepy little hole in the road.
During the Civil War the area was used as a training center for Southern troops. The Yankees came through one day and put our troops on the run. Oh, yes they ran!! They ran to the next town, Tullahoma where the North troops kick butt in the battle and what troops remained after the battle went on to fight in Chattanoga.
The most excitement around here lately has been the JESUS FREEZER! A women who lived in a trailer had an upright freezer on her back porch, a picture of Jesus appeared one day on the freezer. People from all over the area would come to observe what appeared to be JESUS. Newspapers, TV's came to tell the world about the JESUS FREEZER! Our little town was back, people beat a path to see the picture of JESUS. An author even wrote a small screen play about the happenings. Some people said the picture didn't look a bit like JESUS but more like Willie Nelson. After a time things would get back to normal in our little town, its once again a little sleepy town.

Entry for March 10, 2007 YELLOW BULL.......??
A poor cowboy in the old west couldn't afford a horse to ride so he trained his pet bull to ride. One evening he wished to have a beer so he saddled up his bull and headed off to the local saloon. Once in front of the saloon he tied up his bull with the other horses and went into the saloon to have some beers. After a few hours he decided he had better go outside and check on his bull. He hit the roof when he discovered that somebody had painted his bull, bright YELLOW!! Back into the saloon he went, mad as he could be. After several attempts to get everyone's attention he had to draw his pistol and fire 3 rounds into the air. The saloon is now quite, " I want to know what liver lilly no good son of a gun painted my bull YELLOW?? A big Texan 6 ft. 6 inches tall and weighting about 300 lbs said, I PAINTED YOUR BULL YELLOW, WHAT DO YOU WANT TO DO ABOUT IT?? Well..................I..........think...........its .......ready .....for.....the......second coat.
