Entry for April 24, 2007 BURNT BEANS.. !!!
My oldest remaining sister is quite a comedian, I have always said she should try stand up comedy. She had been an over the road truck driver until several years ago her bout with cancer took her off the road. She has survived her ordeal with this terrible disease. Both chemo and radiation treatments didn't dampen this girls spirit. During her driving days she drove in a company that had about 30 drivers and she was the only woman driver. A driver had won Trucker of the year several years in a row. Pam was named Trucker of the Year for two years in a row. Quite a feat for my sis!!
Pam is a true lover of animals. She has many cats, dogs, a couple of horses and a pet bull named Harley. All her animals have names. She is always taking in strays.
My favorite story Pam tells is about her cooking pinto beans when she first married. Pam is an outdoor person and liked to work with our DAD. The newly weds moved into a mobile home and set up house keeping. Her new husband ask her if she could cook some pinto beans, he replied," I wish I had a pot of pinto beans like mom cooked." Pam said yes I will cook you some beans today while you are at work. It's off to the store and she buys some dried pinto beans and returns home and puts the beans on the stove in a brand new pot. Pam becomes involved in some yard activity and forgets about the beans. Whens she see smoke coming out of the trailer it doesn't take long for her to know whats happening, she makes a mad dash inside and some how removes the burning beans and black pot. Not wanting to tell her new husband about the beans and blacken pot she comes up with a bright idea. She will bury the beans and pot somewhere in the yard. She goes to Krogers and buys 4 cans of Luck's pinto beans. That night as they were eating George is impressed with the beans. "Pam these pinto beans are just like mom cooks." Pam didn't tell him for several years his pintos were out of a can!

Entry for April 09, 2007 EASTER DINNER........
My wife takes great pride in preparing special dinners for the family get togethers. Easter is one of those special days. She spent two days cooking a feast for our two children, their children, their husbands or boy friends. Things didn't at all work out like she had planned. The older the grand girls get the harder it is to get them to attend. I know they are adults now and have their own lives to led.
First, our daughter Carla was on a trip to California with her truck driver boy friend to move a military family's belongings. They were going to make it back Sun. but due to an ice storm near Albquerque, N.M. they were stranded for a day. Our oldest grand daughter called and said she was unable to attend this year. Our grandson didn't get to come. Our next to the oldest grand daughter called about an hour before time for dinner and said she had some bad news, her car wouldn't start. Thats not a problem I tell her, I will come to get you and great grandson Greyson. They live about 30 miles from here.
We finally get to set down for Easter dinner and give thanks for what we have. Dinner consisted of ham, creamed potatoes, green beans, pinto beans, macaroni, homemade dressing, cornbread, ice tea, German chocolate cake and cherry cream pie. Yum, yum!
This year my youngest grand daughter gets to sit at the big people table for the first time. Even though the family was not all here a good time was had by all. After all were back to their homes I could see the hurt in my wife's eyes. As time goes by it harder to get all your family to attend these family events.
